Pepper Steak

The meal that always meant coming home—Pepper Steak.

Pepper Steak was my favorite meal growing up, and my mom would make it for me every time I visited home from college. I knew it would be waiting on the table for me when I got home.

Meals made with such intention give a deeper meaning to otherwise ordinary moments in life.

Ingredients:

  • 3 lb beef sirloin or ribs, cut into thin strips

  • 1 ½ tsp Seasoned salt

  • 2 Tbsp oil

  • 1 medium onion, sliced

  • 2-3 bell peppers, sliced

  • 15 oz tomato sauce

  • 1 Tbsp soy sauce

  • 1 cup beef broth

  • ¼ tsp ground ginger

  • 2 tsp corn starch + 3 Tbsp water

  • 1 cup uncooked Jasmine rice, prepared to package instructions

Directions:

  1. Prepare rice according to package instructions.

  2. Sprinkle beef with 1 tsp Seasoned salt.

  3. Brown the meat in hot oil in a skillet, 2-3 minutes each side.

  4. Add beef broth, ginger, soy sauce. Stir to combine.

  5. Add the onion, bell peppers, and tomato sauce. Stir to combine.

  6. Season with remaining ½ tsp Seasoned salt.

  7. Bring everything to a boil and cook rapidly for 5 minutes or longer, until desired tenderness of vegetables is reached.

  8. Combine cornstarch and water until smooth. Gradually add to skillet and bring to boil, stirring constantly until thickened.

  9. Serve over rice and enjoy!
