Not-So-Firecracker Beef Bowls

A go-to dinner in our house that’s regularly in rotation. The flavors of the homemade sauce elevate a simple beef bowl to a tasty meal.

Ingredients:

  • 1 cup jasmine rice

  • 4 tablespoons sour cream

  • 4 tablespoons soy sauce

  • 2 tsp sriracha

  • 4 tsp honey

  • 4 tablespoon Greek yogurt

  • 1 lb ground beef

  • 1 tsp ground ginger

  • ½ diced onion

  • 12 oz green beans

  • ⅓ cup water

  • Sesame seeds to taste

Directions:

  1. In a large bowl, combine Greek yogurt, sour cream, honey, sriracha, and 4 tsp of the soy sauce (you’ll use the rest later). Set aside.

  2. Prepare rice according to package directions.

  3. While rice cooks, heat a large skillet over medium-high heat. Add the ground beef and diced onion, cook for 5-7 minutes or until the meat is fully browned and no pink remains.

  4. Add ginger, remaining soy sauce, and salt and pepper to taste. Cook for about 30 seconds.

  5. Add the green beans directly to the skillet, stir to incorporate.

  6. Add the water, cover, and reduce heat to medium. Cook for 8-12 minutes, stirring occasionally until the green beans are tender.

  7. Add sesame seeds and stir.

  8. Serve over rice topped with the prepared sauce.

  9. Enjoy!
