Family Favorite Italian Sausage Pasta

This recipe is so versatile - this particular night, I made it with one large fresh tomato and no zucchini.

When I don’t know what to make for dinner… I make some version of this. Versatile, quick, and easy!

This recipe is very forgiving - you can easily change up the veggies and the amount of heavy cream to cater to your family’s preferences!

Ingredients

  • 8 oz pasta

  • 2 Tbsp olive oil

  • 1 lb loose, ground Italian sausage

  • ½ tsp red pepper flakes (optional)

  • 3 cloves minced garlic

  • 1 diced bell pepper

  • ½ diced medium zucchini

  • ½ diced onion

  • 1 large diced heirloom tomato (or 1, 15 oz can diced tomatoes)

  • 1 ½ cups heavy cream

  • ½ salt

  • 3 tsp parsley

Directions

  1. Cook pasta as directed.

  2. Meanwhile, heat oil in a large skillet. Cook sausage & red pepper flakes until sausage is browned and no pink remains.

  3. Stir in onion, garlic, peppers, and zucchini. Cook until tender.

  4. Stir in tomatoes, cream, and salt.

  5. Simmer until thickened, 8-10 minutes.

  6. Stir in parsley and cooked noodles.

  7. Enjoy!
