Family Favorite Italian Sausage Pasta
This recipe is so versatile - this particular night, I made it with one large fresh tomato and no zucchini.
When I don’t know what to make for dinner… I make some version of this. Versatile, quick, and easy!
This recipe is very forgiving - you can easily change up the veggies and the amount of heavy cream to cater to your family’s preferences!
Ingredients
8 oz pasta
2 Tbsp olive oil
1 lb loose, ground Italian sausage
½ tsp red pepper flakes (optional)
3 cloves minced garlic
1 diced bell pepper
½ diced medium zucchini
½ diced onion
1 large diced heirloom tomato (or 1, 15 oz can diced tomatoes)
1 ½ cups heavy cream
½ salt
3 tsp parsley
Directions
Cook pasta as directed.
Meanwhile, heat oil in a large skillet. Cook sausage & red pepper flakes until sausage is browned and no pink remains.
Stir in onion, garlic, peppers, and zucchini. Cook until tender.
Stir in tomatoes, cream, and salt.
Simmer until thickened, 8-10 minutes.
Stir in parsley and cooked noodles.
